Sweet potatoes are a great, healthy alternative to white potatoes. I use Soy yogurt in my recipe for a dairy free alternative, but you could easily use cow’s milk or goat milk yogurt.
1 large sweet potatoe, scrubbed, peeled and chopped
2 green onions, washed, trimmed and chopped
1 stalk of celery, washed, trimmed and chopped
1/4 cucumber – I use English for a seedless version
1 Tbsp white vinegar
Juice of 1/2 a lemon, you will also use the rind of this part of the lemon – grate the rind
1/4 cup fresh cilantro or 1/8 cup fresh parsley
Fresh mint – just a few, torn into small pieces
1/4 cup plain soy yogurt
Sea salt and pepper to taste
Place the sweet potatoes in a pot of boiling water, reduce heat and cook over medium heat until just tender – about 20 minutes. Do not overcook. Remove from heat, drain and place in a bowl.
In another bowl place lemon juice and vinegar and stir.
Mix all chopped vegetables – celery, onion, cucumber and cilantro and then add the lemon juice mixture to this. Stir to blend. Add cooled sweet potatoes and season with salt and pepper and gently toss.
Place yogurt and graded lemon in a bowl – stir. Add fresh mint. You can dip your potato salad in the yogurt mixture or place it directly in the potato salad.
Makes 2 servings, but can easily be doubled or trippled to fill the quantity you need.

This recipe can be eaten all year round. You can even make it the main course if you like. You will need Sweet potatoes, cucumbers, green onions, salt, pepper, lemons, yogurt, vinegar, cilantro or parsley, 2 bowls, and a pot of water.

Sweet potato salad finished
Here is your finished product. This is such a great tasting and refreshing salad. Pair this with a chicken wrap for a complete meal. You will be getting a great source of protein, carbohydrates, and fats into your meal. This is great as a leftover also.
