March is National Sauce Month, and everyone is saucing delectable dishes to get in the spirit. Uchi, off of Westheimer, inspires one to experiment with different sauces. Uchi’s makimono, or sushi rolls, includes a ham and eggs sushi roll, which is katsu pork belly, yolk custard and espelette. Seeking out other delicious sauces that really impact a dish, let’s experiment with a classic: meatloaf.
The sauce on the top of the turkey meatloaf minis is the star of this dish. The ladies on the Lifetime television show “Cook Yourself Thin” provide an easy recipe with a simple, delicious sauce. Below is an updated revised recipe that bumps up the flavor. Start with:
- 1 diced onion
- 5 oz. bag of spinach
Sauté the onion and spinach over medium heat in a pan. Then set it aside.
In a separate bowl, mix together:
- 1 ¼ lb. ground turkey
- 1 crumbled piece of whole wheat bread
- ½ c. skim milk
- 1 egg
- 1/8 tsp. nutmeg
- 2 tbs. Parmesan
- Salt and pepper
- A bit of Tony Chachere’s (salt free)
Mix in the diced onion and spinach. For a richer meatloaf, add the first six ingredients from the pepper jack chicken recipe.
When everything is combined, put the meatloaf in a muffin tin. The smaller pieces will help control portion sizes. Then add the sauce to the top of each piece.
The sauce is:
- 3 tbs. ketchup
- 1 tbs. brown sugar
- A few squirts of hot sauce (to taste)
This sauce is simple and an effective combination of tangy and sweet. Pop the meatloaf into the oven at 375 degrees for 35 minutes, and it will be a delicious down-home treat to compliment the exotic dishes you may have had earlier in the week. Vegetables or a salad is a great side dish to this saucy favorite.
This is the complete mixture with the extra addition from the pepper jack chicken recipe. This photo does not include the spinach. It is better to combine the ingredients with your hands when using ground turkey or ground meat.

Once all of the ingredients are combined, place them in a muffin tin. The tin will help with your portion control. It is recommended that someone eat two pieces of meatloaf and vegetables or a salad on the side.
The best part of the turkey meatloaf minis is the sauce. The recipe from “Cook Yourself Thin” replaces the brown sugar with Worcestershire sauce. However, when they show aired on television, they used brown sugar. It adds a sweet, more smooth flavor.

The turkey meatloaf minis are ready for the oven once they are topped with the savory sauce. The sauce will not burn, but cooks into the meat. It will be a little crusty on top, but still delicious.
