Today is a gloomy Friday. The weather: who knows? Rain, sleet, sun shine, snow, maybe even an ice storm is very much regular in Indiana. That being said, most aren’t planning to go outside for the weekend, but no one is going to waste away in the house with nothing to do.
My plans for Friday nights like this is first to invite a lot of friends over, have someone bring a movie and someone else bring some beer and I’ll make the nachos. This means that a recipe is in order.
The Food: Nachos Del Cielo
1 white onion
1 green bell pepper
White meat chicken
Low fat sour cream
Salt & pepper
1 can of fire roasted tomatoes
1 can of black beans (rinsed)
1 huge bag of baked Doritos
And whatever other toppings you like
First we start with the chicken cut it into small cubes, whatever size you deem appropriate. next heat a skillet on medium high once hot add about 1teaspoon of olive oil, just enough to coat the bottom of the skillet. Add the chicken, onion and green pepper and season with a pinch of salt and black pepper. Once chicken is cooked through, add fire roasted tomatoes and a few shakes of hot sauce, cover and let simmer.
Black beans can be microwaved in a little water or boiled for an approximate 5 minutes. The only thing left to do is: assemble and destroy.
